The very first 'Anime' I watched, I watched it with very little expectation and found myself in love with it after a couple of episodes. If you're a first-time anime goer I'd highly suggest FMA as it is a great gateway anime.
The themes, characters and music are really good. I am of the minority who actually prefer this version to Brotherhood. I find the ending (including conqueror of shambala), to be a more adult themed ending than the more cliched ending of brotherhood but that's just my opinion. I love both and they're my 2 top for a reason.

The more recent FMA which strictly follows the Manga, for this reason, the graphics and visuals are a lot cleaner than the original. I watched both of these in English DUB as they were my gateway anime and I've never got around to re-watching them in Japanese. I find the English DUB to be tolerable, if not actually pretty good. The guy who does Ed's voice does a great job, I can't say that for much else except maybe Mustang's voice actor.
I've probably watched a lot of better anime since I begun watching anime but since FMA and FMA: Brotherhood gateway'ed me, they'll forever hold a special place in my heart and I can't find it in me to ever rate anything over it.

This was the very second anime I ever watched and it was amazing, I also watched this dubbed.
If you like action, strategy and mystery then Code Geass is for you. It can get a little off the pace at time but for the main part it's probably got the best storyline/ending of any anime I've ever watched.
This is the kind of show you can binge watch both seasons in a couple days.
A quick run down on the actual show:
Japan (area 11) has been taken over by Brittania (and named so). The main character is a Prince of the Brittanian Emperor, however as a child he and his younger sister were abandoned by him in Japan. Since that day, the main character has hated his family, no one knows of his secret identity.
One day he witnesses and gets mixed up in an event that sees him acquiring an ability that allows him to force people to obey is instruction to completion. The story is about him learning about the power, and ultimately using the power to bring down the brittanian empire and make the world a better place for his sister.
I don't really want to spoil anything, just watch this and be in awe.

This is the second season of Code Geass, consider this a part of my third ranking.
Steins;Gate (2011)
Holy Shit, just watch this anime. Wowie. I watched it in English dub as I was still new-ish to anime at this point in time. I think this was the 5th or 6th anime I ever watched? I watched it after Soul Eater.
Basically, the show is centred around a 'Mad Scientist' who tampers with the idea of changing the future. He does this by figuring out how to send text messages into the past. Basically, he has a bunch of friends who help him in his endeavour and shit hits the fan after around episode 10/11 and everything after that episode is just thrilling. I 100% will not spoil any possible thing to do with the plot so just trust me and watch this if you get the chance.
