Street Fighter II Turbo - Super famicom and SNES
For my money, the finest fighting game that there has ever been. I've never played any other game that offers such balance, control and depth of play. There have been games before and since that offered up more characters, bigger combos and went heavy on the violence and gore but none have matched the purity of play that Turbo/Hyper Fighting provides in spades.
When it was first released back in 1992, Hyper Fighting looked like another cynical move from Capcom, trying to eek yet more life out of the insanely popular Street Fighter II. On the surface, Turbo offers little more than the continued ability to 'be the bosses', increased speed and a few (literally) new moves, but the reality is much more.
Capcom somehow managed to improve upon the already brilliant formula laid down in the previous games and provided the world with absolute masterclass.

Tekken 2 - PlayStation
Tekken 2 in my eyes is not only the greatest installment in the Tekken series but also the only fighting game that has ever been able to hold a candle to Street Fighter II Turbo.

Killer Instinct - Super famicom and SNES
Perhaps a touch cynical in it's conception, Rare's Killer Instinct basically took Street Fighter crossed it with Mortal Kombat and added in a plethora of insane combos to create what was ultimately one of the generation's top fighting games.
Boasting amazing Silicon Graphics inspired visuals (also seen in Donkey Kong Country), I can only remember being amazed at how Rare managed to transfer these jaw dropping graphics to the humble SNES, and although the quality did suffer somewhat, the end result was still outstanding.
Killer Instinct never quite hit the heights of Capcom and SNK's finer 2D offerings but could definitely hold it's own amongst the sea of fighting games from the 90's.
