Meringue with whipped cream and fruit
What to buy?
Meringue
6 proteins
300 g fine sugar
1 tablespoon of lemon juice
1 tablespoon of potato flour
cream
400 ml of fondant cream
250 g mascarpone cheese
400 g of favorite fruits: cherries, raspberries etc.
1 tablespoon of vanilla sugar
1 tablespoon of powdered sugar
How to prepare?
Meringue
Whisk the whites with a mixer, gradually add sugar, potato flour, lemon juice and a pinch of salt at the end of whipping.
Place the beaten proteins on a baking tray lined with baking paper, try to get a circle shape.
Adjust the oven to 175 degrees, immediately after putting the meringue reduce to 150 degrees and bake for 90 minutes. After this time do not take out the meringue, just leave it in the oven to cool down completely.

To prepare a cream, whip cream, add mascarpone, vanilla sugar and powdered sugar.
Place the cream on the cooled meringue bottom, garnish with fresh fruit.
