Delicious mushroom soup
1 kg of forest mushrooms
2 liters of vegetable broth
200 ml of fondant cream
2 shallots
2 branches of fresh thyme
1 tablespoon of butter
1 small clove of garlic
salt pepper
How to prepare?
Mushrooms cut into thick cubes (if the hats are very small, leave them whole).
Garlic, shallots, thyme, chop finely and cook them in butter.
Add the mushrooms and fried for a few minutes to the fried garlic, shallots and thyme.
Add the broth to the mushrooms (the recipe for broth can be found here), pour a little liquid, mix it with the cream and pour it back into the soup. Cook about 10-15 minutes.
Boil again, season to taste with salt and pepper.
Serve with pasta, pouring dough or croutons.
