Hey,
Supprised that George R R Martin didn't make the lists yet. Here comes mine (not top 10, unless you count individual books after the writer is done writing the series ;-)):

So far from what I've read, in no real order, and I'm going to count a series as a single entry or else I'd never pick properly :P:
Nineteen Eighty-Four - George Orwell
The Old Kingdom trilogy - Garth Nix
His Dark Materials - Philip Pullman
Good Omens - Terry Pratchett and Neil Gaiman
The Discworld series - Terry Pratchett
The Otherwolrd series - Kelley Armstrong
The Hitchhiker's Guide to the Galaxy series - Douglas Adams
The Darren Shan Saga - Darren Shan (they're short and entertaining)
The Last Vampire series - Christopher Pike
and... errr...The Vampire Chronicles - Anne Rice
I've not read as much science fiction/fantasy as most of you, so this list will probably change by the next book of the genres I read. :P
