Lately I've been listening to Jupiter from Gustav Holst's The Planets alot, though I find myself always going back to Alexander Borodin's Polovetsian Dances. That or Pictures at an Exhibition by Modest Mussorgsky, especially The Great Gate of Kiev.
Yeah... It's impossible for me to choose just one since my mood is always changing and my taste in music changes with my mood. Like if I feel a certain type evil I start hearing Saint-Saëns's Danse Macabre playing in my head. That's just how I roll.
