Matthew was a minor character who debuted in "The Mountain". He was the apparent ruler of the Mountain of Matthew, and existed as the distilled body of all the beings who had completed the mountain. He is now one form of the several beings who have merged into him. In the episode, he was met by Finn and the Earl of Lemongrab after they completed their respective obstacles.
