Gỏi cuốn chay, Buddhist or vegetarian fresh spring roll or summer roll, is a Vietnamese dish consisting of vegetables, tofu, bún (rice vermicelli), and other ingredients wrapped in Vietnamese bánh tráng (commonly known as rice paper). They are served at room temperature (or cooled), often with a side of peanut sauce, and are not deep-fried or cooked on the outside.
