I'm surprised Tommy Lee Jones hasn't done any more directing since then. As for Drew Barrymore, she will probably get a second movie soon, so she shouldn't really qualify for this list. There are lots of directors who have made one movie and they have several more coming up (Duncan Jones, Gareth Edwards etc).

You should watch "Limite", the only film directed by Mario Peixoto. This movie is an unknown and underrated masterpiece. Even in Brazil it's only known and appreciated by critics and cinephiles.

I was going to make a list like this some time ago but then I noticed you did it before me. It doesn't matter though, in any way, it's great to have this kind of list here. Here's a few suggestions!

The Apartment (Gilles Mimouni, 1996) - the director has made one directorial effort after this, in 2011, for TV.
Whisper of the Heart (Yoshifumi Kondo, 1995) - Kondo was meant to be the follower of the great Hayao Miyazaki but died soon after the completion of this masterpiece.
Carnival of Souls (Herk Harvey, 1962) - A cult horror film.
Home at Seven (Ralph Richardson, 1952) - One of the most respected theater and movie actors directed only one film.
Films with not over 7.0 in IMDB, yet, maybe, interesting to add:
Kinski Paganini (Klaus Kinski, 1989) - the only film of the egomaniac cult actor Kinski.
Maximum Overdrive (Stephen King, 1986) - King has said that he will never again film another movie.
Arthur (Steve Gordon, 1981) - A hugely popular movie which was the only film of Steve Gordon, who died a year after the success.
Kotch (Jack Lemmon, 1971) - The only film directed by Jack Lemmon.
Short Cut to Hell (James Cagney, 1957) - James Cagney's only directorial effort.
A very nice list. There are some very good movies here. It makes you wonder what would have happened had they had the oppertunity to direct more movies. Especially Marlon Brando and Charles Laughton.

How about "Buddy Boy" by Mark Hanlon. One of my favorites, and the movie that introduced me to Aidan Gillen. I saw it with my dad recently, and he said it was self-indulgent crap. Huh. There's no accounting for taste.
