They Might Be Giants are the only "popular" rock band I can think of that's not listed here. In addition to keyboards, founding member John Linnell also plays the following: accordion, baritone and bass saxophone, & clarinet.

Apocolyptica and Skillet both have cellos and Skillet and Tantric have violinists. Also, Sully Erna from Godsmack has every instrument under the sun on his solo album but I'm not sure if that works for your list.
