Two others that I've seen which weren't on your list (you may not have seen them):
- Meet Joe Black: not one of his better efforts. Anthony Hopkins give a much better performance.
- A River Runs Through It: I didn't much care for the film or his performance

Well, 12 Monkeys I have to take a rewatch with, but I still will stand on my choice on Benjamin Button. Amazing movie :)

Seven, Fight Club, TAOJJ, Inglorious Basterds, Snatch, 12 Monkeys, and Burn After Reading are all stellar examples of Brad Pitt's versatility. He's very talented as well as beautiful.
